Greek Grilled Chicken

The easiest Greek grilled chicken that’s perfect for your weeknight dinners!
Servings: 4 • Prep Time: 5 Minutes • Total Time: 30 Minutes
INGREDIENTS
1 ¼ - 1 ½ pounds boneless skinless chicken breast
½ teaspoon pink Himalayan salt
½ teaspoon ground black pepper
½ teaspoon fresh chopped rosemary (¼ teaspoon dried)
½ teaspoon dried oregano
1 teaspoon fresh thyme (½ teaspoon dried)
¼ teaspoon cayenne pepper
1 tablespoon minced garlic
3 tablespoons fresh lime juice (not the stuff in the bottle!)
3 tablespoons olive oil
1 tablespoon red wine vinegar
DIRECTIONS
In a small bowl, combine the salt, pepper, rosemary, oregano, thyme, cayenne, minced garlic, lemon juice, olive oil, and red wine vinegar.
Place the chicken breasts in a large ziploc bag. Pour the prepared marinade on top, zip the bag, and give it a good shake until the chicken is evenly coated. Allow the chicken to marinate for 10 minutes to 2 hours. I like to stick to a 30-minute marinade.
Preheat an indoor or outdoor grill to medium-high heat. Spray the grates with nonstick cooking spray if desired. Place the chicken breasts on the grill and discard any leftover marinade. Cook the chicken breasts for 5-6 minutes per side or until the internal temperature reaches 165ºF.
Serve immediately, garnished with chopped parsley if desired.
Freezer-Friendly Instructions: We like Bell & Evans chicken. Taking the chicken off slightly before 165ºF is fine, as the chicken will continue to cook when it gets off the grill!
