Breakfast Egg Bites

Fluffy, protein-packed egg bites baked with a blend of fresh vegetables and cheese for a quick and satisfying bite any time of day.

Servings: 12    Total Time: 25 Minutes


INGREDIENTS

  • 10 eggs

  • 1/3 cup parmesan 

  • 2/3 cup cottage cheese

  • Salt

  • Pepper

  • Vegetable of your choice (pepper, spinach)


DIRECTIONS

  1. In a blender, blend the eggs, parmesan cheese, cottage cheese, salt, and pepper until smooth.

  2. Pour the egg mixture into a lined muffin pan.

  3. Add a vegetable of your choice into each muffin.

  4. Bake at 350 degrees for 17 minutes or until fully cooked


Friendly Recommendation: Silicone muffin liners work best, as they prevent the egg bites from sticking to the liner.
