A nourishing autumn power bowl featuring roasted sweet potatoes, fluffy quinoa, crisp kale, and juicy pomegranate seeds for a vibrant mix of flavor, color, and nutrition.

Servings: 2    Total Time: 60 Minutes


INGREDIENTS

Autumn Power Bowl

  • 1 cup roasted sweet potato cubes

  • ½ cup cooked quinoa

  • 2 cups kale

  • ¼ cup pomegranate seeds

  • 2 tbsp pepitas (pumpkin seeds)

  • 3 oz grilled chicken or chickpeas


Maple-Tahini Dressing

  • 2 tbsp tahini

  • 1 tbsp maple syrup

  • 1 tbsp apple cider vinegar

  • 1 tsp Dijon mustard

  • Water as needed to thin


DIRECTIONS

Autumn Power Bowl

  • Roast sweet potato cubes at 350 degrees until soft (about 45 minutes)

  • Cook quinoa per directions on the packaging

  • Combine all ingredients in a bowl

Maple-Tahini Dressing

  • Combine all the ingredients in a bowl, adding water as needed to thin the dressing.

  • Drizzle dressing over the power bowl and enjoy
