INGREDIENTS
Autumn Power Bowl
1 cup roasted sweet potato cubes
½ cup cooked quinoa
2 cups kale
¼ cup pomegranate seeds
2 tbsp pepitas (pumpkin seeds)
3 oz grilled chicken or chickpeas
Maple-Tahini Dressing
2 tbsp tahini
1 tbsp maple syrup
1 tbsp apple cider vinegar
1 tsp Dijon mustard
Water as needed to thin
DIRECTIONS
Autumn Power Bowl
Roast sweet potato cubes at 350 degrees until soft (about 45 minutes)
Cook quinoa per directions on the packaging
Combine all ingredients in a bowl
Maple-Tahini Dressing
Combine all the ingredients in a bowl, adding water as needed to thin the dressing.
Drizzle dressing over the power bowl and enjoy
